Nurturing Student Health Through Engaging Nutrition Education (Featuring Elisa Garza, DD Dietetic Intern)
Elisa Garza of San Antonio Texas completed her Business Management Rotation with Aramark at the University of Texas at San Antonio Dining Services. For her final project, she developed a ‘Create a Kitchen' experience for students, offering an engaging platform for interactive learning.
Elisa's final project showcased a unique recipe for a customized charcuterie box. Students were guided through this culinary adventure, honing their knife skills and exploring new, nutritious foods like hemp seeds, pickled okra, and wheat germ. You can witness Elisa's demonstration in this full video.
This experience was transformative for Elisa, boosting her confidence in public speaking. She was a bit nervous as she began; however, within five minutes of starting the presentation she felt comfortable answering questions and provided an engaging, well-structured experience for students.
Moreover, Elisa's contribution extends to the 'What's in Season?' Instagram post from @utsadining, highlighting the seasonal produce of November-December. This post not only showcases in-season delights but also educates readers on the myriad benefits of embracing seasonal produce."
