Peas & beans – as a Caribbean food group – represent a staple in many food cultures. Enjoyed in various dishes such as dhal, rice & beans, and even processed forms like tofu, the uses of this food group are as diverse as the diaspora itself. However, peas & beans tend to be underrated, are often criticized as being unhealthy among some groups such as those living with diabetes and may even be seen as a “poor man’s” food that offers little value. Through the demonstration of Caribbean-based dishes that are as practical as they are tasty, this session seeks to highlight how peas & beans can be used as a tool to connect dietitians with their clients, and communities of color and to open the dialogue of cultural humility in the profession to propel inclusivity in nutrition and healthy eating.
